Red Wheat Berry Salad

I made the Red Wheat Berry Salad for supper tonight that you can find here. It was very good! My husband looked at it skeptically, but when he tasted it, he said, "Wow! This tastes way better than it looks!" And true enough, the mix of lemon, mustard and honey is a very nice combination of flavours. For an added dish, we had scrambled eggs with cucumber and tomatoes in it.




Here it is with the changes I made:

Red Wheat Berry Salad
1 cup hard wheat kernels
1/2 cup "Cavena Nuda" rice of the prairies
2/3 cup chopped walnuts
1 cup dried cranberries
2 1/2 tablespoons dried parsley
1/2 cup green onions, chopped
3 tablespoons lemon juice
1 tablespoon honey
1 tablespoon mustard
1 teaspoon sea salt
1/2 teaspoon ground pepper

Soak the wheat kernels overnight and drain. Boil them in water until tender and then drain. Separately, boil the rice until just tender. Drain it as well. Combine the rice and wheat kernels. In a small mixing bowl, combine the lemon juice, honey, mustard, salt and pepper. Add it to the rice and wheat kernels and stir to coat. Then mix in the walnuts, cranberries, parsley, and green onions. Serve cold.
