Italian Sausage and Peppers

I love this recipe because it is so easy and so good. I used to make this for my family when I was in high school a lot. There really is no seasonings because the italian sausage is what puts all the flavour in the dish.

Here's the recipe:

Italian Sausage and Peppers
1 teaspoon olive oil
4 mild Italian Sausages
1 28 oz. can of whole tomatoes
1 onion, coarsely chopped
1 green pepper, coarsely chopped

First, heat the oil in a pot just until it becomes runny enough to cover the bottom of the pot.

Then, cut your sausage into balls.

And cook to brown the outsides.

When outsides are brown, add about a teaspoon of water and cover with a lid and continue cooking to cook through.

While it is cooking, cut up the onions and green peppers.

When it is cooked through, drain the extra oil from the sausage. Then add your can of whole tomatoes.

Mix in, cutting up the tomatoes with your spatula into large chunks. Bring it to a simmer, and continue cooking on low for about 10 minutes to flavour the sauce.

About 5 minutes before serving, add the onions and green peppers. Mix them in and continue cooking. The best texture is if the outsides of the peppers and onions are just starting to cook, but the middles are still raw and crispy.

Serve it on rice.

Enjoy!
