I'm really venturing out here today not using any recipe. I had picked up these hard wheat kernels at the Bulk Barn and just added whatever I had on hand to it. There's no measurements for the spices because I just added what I thought looked good. It was really tasty so here it is:
1/2 cup uncooked Hard Wheat Kernels
olive oil
1/2 onion, diced
2 garlic cloves, minced
1/2 lb. ground beef
1 mushroom, sliced thinly
1/2 yellow pepper, diced
1/2 tomato, diced
thyme
parsley
basil
salt
pepper
1. Cook the wheat kernels ahead of time. I started them about 2 hours before meal to make sure they'd be done. (They take 1-2 hours to cook if you don't soak them first.)
2. In a skillet, pour a little olive oil and heat. When hot, add the onion and garlic. Saute until the onions are translucent.
3. Add the ground beef. Break it up and continue cooking until cooked through.
4. Add the mushroom, yellow pepper and tomato. Continue cooking until mushrooms are tender, but peppers still slightly crispy.
5. Add the cooked wheat kernels. Season to taste and stir everything together. Serve hot.
