I have started making overnight oats for breakfast every morning and I love it. I know I'm eating something good for me and I make it the night before so I don't have to think too hard first thing in the morning and it's all ready for me. My kids also really enjoy it (3 and 2 years old.)
Usually I just make a simple recipe and multiply it to fit my family's consumption:
Simple Fruit Overnight Oats
1/2 cup quick oats
1/2 cup milk
1 tablespoon chia seeds
1 tablespoon honey
1/2 cup frozen or fresh blueberries/raspberries/sliced strawberries/etc.
(I switch up the kind of fruit for variations in flavour.)
Combine it all together, cover and put in the refrigerator. Ready whenever you are the next morning!
However, if you're up for a real treat, this Blueberry Lemon Overnight Oats recipe you can find on Slim Pickin's Kitchen is delicious! (One I made is pictured above.)
Not having blueberry yogurt, I used balkan style yogurt with blueberries mixed in. It works! I also used regular milk instead of almond milk and replaced the stevia with honey. I only had ground flax seeds instead of the whole flax seed.
what a beautiful pictures... the colours are super pretty!
